For example, I've seen a stocking fetish website run by someone who is not 'into' stockings at all. Compared to a site run by a real stocking lover, it is jumbled and off-topic in many areas, and as aresult doesn't really appeal to its target audience.

If it's just down to the amount of content on the site then the site has to be enormous to compete and inside the site it has to be organised.
Our likes and desires run in a stream with in a niche, paysites should cater for that single stream with different photographers interpretations. For instance a teen paysite with Aarons, Mutts and our content would be work because of the similarity between our interpretation of the teen niche.
So if you do not base the sites content on "what turns you on" what do you base it on? Without a lot of knowledge on a niche/style, the risk is run of a site trying to appeal to all and ending up appealing to no one. There are millions of surfers out there looking for porn, going for 0.5% is the safer bet.
