We test each sponsor with 10,000 hits the one with the best conversion for our type of traffic is the one we chose. If they work with a well known processor like Epoch or CCbill then thats an added bonus because we know we will be paid on time. Obviously the site has to look cool and do its part in the conversion process. We only promote sites with all exclusive content as we have found they convert and retain members much better than other sites.
Word of mouth definitely has a larger part in it. To find a sponsor though, I usually use boards, AVN Online Mag, Klixxx, or just see what others are using on their sites. To test it I'll send a good 10k-25k hits to, then I'll compare conversions, ratios and payouts and see which is the best for the next few months, then do the whole process over.

First I look at their sites - looking for originality,design,etc.. then I try to call them. Then I spend about 20 minutes asking questions about their programs and policies, while I'm reading them. That usually lets you know how well they know their own program and their attention to affiliate details. After that I ask questions that are blatantly breaking their rules to find out what kind of people they are. After that I signup and send 5k test traffic.
I too will not do business with someone I can't reach on the phone at 3am.

I don't use a lot of sponsors. I link to a few sites I like, usually run by friends who I want to support.
The times when I have used sponsors for the sake of making the extra money, it has been some impressive deal they were offering on signups. It never really worked out.
I test sponsors out if I like their site or I like their webmasters or I like their company for whatever reason i.e. either I think they are good people or they are contributing something original and interesting or ideally a combo. If the sponsor does okay, then I stick with it. If it does well, I up the promo.
