hoping to gather more info first on everything, including an extended stay visit. Would be no reason visiting if I could not get what I wanted eventually, specially if I fell in love with the place.

Some of your "wants" are extremely difficult Thailand, you can't own land outright, there is ways around it though proxys or debt recognition agreements, but unless you've been here for years like DWB I wouldn't recommend even considering land ownership.
