Noodle Kugel is my favorite casserole. I lightened it up by using low-fat cream cheese, egg substitute, Splenda and no sugar added canned pineapple.
I made it one time and brought over a piece to my mom. Never told her that I lightened it and she loved it though said it tasted a little different. Where I told her that it’s sugarfree and low fat, the look was priceless!
I love the old recipes that bring back memories. I wish mom were forty years younger and could cook and bake for me. We never had cake mixes at home or frozen dinners. She’d bake challah every Friday basically and I didn’t understand why since you could buy it for a buck or two.
Childhood memories are made up of bad food and family visiting and bringing up the past. Everyone has a story to tell.
