Because they have an education, brains and the right tools... maybe? Just because you don't understand it doesn't mean it can't be true. I don't know how the collapse of the wave function occurs during observation of quantum events but it still happens.
I think carbon dating is only good for so many years, 40 or 50,000 years. But there are most definitely ways to get the answers they need, quite easily by the surrounding soil deposits, etc. Just like the rings in a tree that tell you how old it is.

my theory is that the earth was then inhabitated by dinos..
then came a space ship of some sort with these ratty looking creatures who were perhaps booted of another planet somewhere..
the spaceship people whacked the dinos as they could see that their pet rat creatures would not stand a chance against the meat eating dinos..
