Yes it still happened.
As soon as Marty goes back in time in BTTF1, we are seeing an alternate time line from that point, on. Biff is still an ass and still tries to rape Loraine.
Biff is still the same Biff as he was in the original time line, but only up until George punches him. After that he becomes a nice Buff.

Maybe I guess.... but if you want to be really picky, maybe the Les Paul was too expensive for a guy that plays high-school gymnasiums to afford? Who knows. The movie makers probably just said "Give that man a 50's-era guitar", and no one checked to see the year it was made.

If you want to see something that's really fucked up, re-watch the scene where Biff is chasing Marty around in his car outside of the malt shop. The car that Biff is driving changes between scenes. It's a terrible continuity error that most people don't notice, but once you see it, you can't unsee it.
I don't know what kind of car this is exactly, but if you watch the headlight area, sometimes the car has just 2 lights in front, and other times it has 4. SLOPPY!
