Lol the age old question. Honestly - the market is saturated in many big cities - competition is high, living costs are high. Providers aren't necessarily booked solid - so even though they are charging 'high rates' - it's not like they are working 8, or even 10-12 hour days. Some days they have 0 appointments. So you can't think of it like hourly pay ($200hrX8 hours).
A lot of girls may be happy with a goal of making $300-$400 per day. For very high end girls - those charging $1000+ per hour, they often do save. Or spend a ton of money on marketing and having the right wardrobe - or apt to host guests.
Of course, there's the drug addict stereotype - which has sadly, some basis in reality. But also - when you are young, and many providers are - you just don't know how to manage money. You think you will make $500 + a day forever.
