I am pretty sure that, as far as Visa and MC are concerned, dating is "high risk" whether it's adult or not, you might be able to use paypal and other stuff temporarily but eventually you'll need a high risk setup, which won't be as straightforward as setting up a pure adult site or a pure e-commerce site, you should talk to someone who does processing, reach out to orbitalpay, netbilling, and mobius for a private MID or CCbill or Epoch for ISPS setup, you likely won't be able to use CCbill or Epoch with a non-adult site, but I think both have separate setups for that kind of site. Can't remember what they are called.

I have helped a few people setup processing through 3rd party processors and direct bank merchant accounts. In virtually all cases (especially with merchant accounts), the services were considered high risk simply because the purchases are done 100% online (card not present).
It's not as bad as it used to be, but any purchase with a Visa/Mastercard is basically an unsecured loan that can be called back at anytime (within around 3 months). So it's risky and therefore the $500 fees and practically mandatory.
Crazy idea, but have you checked with Paypal? Not sure if they would allow it but if they do, it would be the best option for you. Not only are they dirt cheap, but using Paypal as a payment processor makes it really easy for "impulse buys".
I emailed Paypal and kept getting scripted replies where it didn't even seem they read my emails even after a little back and forth.. will try to call them..

Just being online does not make it high risk. We have many, many non high risk merchants that we handle processing for that are exclusively online.
