        Ah fuck me the odd myths are mind boggling. Mcdonalds just uses frozen fries and In and out uses fresh cut fries. Early on so did Mcdonalds, but for consistency they switched to frozen. The fries are not assembled in any way. They come from russets grows specifically for the chain, peeled, cut, seasoned, par fried, and flash frozen.

        Then when frying at proper heats the external pressure of the water inside of an item pushes out enough so that the external liquid (oil in this case) does not penetrate the food. This results in next to no oil being lost to the food itself. Even the small amount that could be on the outside is beyond minimal. At proper frying temps a fried food will contain less oil than a standard serving of vinegar based salad dressing.

          You want real fries then go to a place that serves Belgian Fries they are without a doubt the very best fries you will ever taste. Very very few places serve real Belgian Fries because they take hours to make and there is a storage issue. I get mine at a restaurant in Mission Beach , called Cafe Joie, the chef there prepares them fresh each day ( no frozen crap here ) from Russet Potatoes, huge fries that will fill anyone up. If you get to Mission Beach this summer drop by this place it will be like you are tasting fries for the first time

            McDonald's fries are horrible. Burger King's fries are horrible. Carl's Jr. fries are horrible. Jack in the Box fries are OK. In n Out regular fries are the shit. In n Out Animal Style fries are the shit. Once a month, though. More than that, and it's just plain wrong.

                                McDonalds fries are good too but unhealthier... and I know that In N Out french fries are freshly made and made from real potatoes. It can be an acquired taste tho. The first time I ever had an In N Out fry I didn't really like it but then it grew on me and now I prefer it over McDonalds any day.

                                        First off fries are typically only as good as the oil you fry them in. They both use russet potatoes, one is just fresh other is frozen. However a frozen fry typically cooks better than a non frozen one since most places will not par fry their fries first. Yes you fry french fries twice, otherwise they end up like limp potato dicks.

                                        Now they both use vegetable oil, McDonalds just breaks down the possible oils in their list which would be same as in and out (both should say Canola, corn, soybean, hydrogenated soybean, partially hydrogenated soybean, partially hydrogenated corn oil, and a acid to preserve freshness which McDonalds uses citric acid (vitamin c). McDonalds does use an anti foaming agent (you got them there, but then again In and out claims its only as good as the potato which is also a lie, its the damn oil).

                                        Next list of items is what is in the natural beef flavor. As stated before they used to just fry the potatoes in 93% beef tallow (fat) with some oil that gave the fries flavor. However people bitched about cholesterol in fries so they switched to the very inferior vegetable oil and beef flavoring. Yes beef flavoring is key in the best tasting fries.
