Because the Mexican cartel could go after him, or the European cartel.
When you're talking about millions of dollars on the table you've got plenty of motivation to threaten to kill anyone that stands in the way.
The real question is, why didn't anyone try to do the same with Walt's family? You can argue that Walt was in a different position than Jesse, but we're talking about revenue in the millions of dollars. Powerful motivation.
But hey, it's a tv show, not a documentary
