You are comparing addiction to just drinking. They are not the same. The average person is not wildly different sober than they are while drunk. Most people are more or less the same. Healthy, well adjusted people are more or less the same behaviorally, drunk or sober. Louder? sure. Annoying? A little too touchy or whatever... yeah. But not "totally happy go lucky and fun, friendly, great person sober and then a total asshole drunk" unless they are an asshole to begin with. A person who turns violent while drinking for example, is typically someone who controls those same impulses while sober. The alcohol, in and of itself doesn't not "cause" that person to become violent. It causes that persons judgement, inhibitions, use of restraint, impulse control, common sense, self control etc etc etc to diminish allowing those behaviors to come out.
