I don't know where you get your info from but "we" Americans do not normally fry crab. We steam it. I can honestly say I've never eaten fried crab...ever. Boiled crab even...never heard of it here in the states. We steam cook crab. Frying and boiling removes all the goodies.

Be careful with softshell crab though... I'm not allergic to any shellfish or seafood, but for some reason, I am allergic to softshell crab and found out the hard way when I ordered it once.
