One summer in college I was at the beach working as a waiter and a table asked me what soft shell crabs were. I explained it to them and they said they would pass because they didn't want it staring back at them. I said something like "no, the chef cuts the face off." He did, but apparently that wasn't what they wanted to hear either.

Just don't understand one thing however. Whey the US people love it (e.g. crabs) fried instead of boiled? Personally I just can't eat fried seafood.
I don't know where you get your info from but "we" Americans do not normally fry crab. We steam it. I can honestly say I've never eaten fried crab...ever. Boiled crab even...never heard of it here in the states. We steam cook crab. Frying and boiling removes all the goodies.

Nookster ... West Coast people will have a hard time finding fried crab on the menu in most restaurants, unless its specialty is serving up seafood. Just know CyberSEO is correct in mentioning fried crab, as it's extremely popular along / near the Gulf of Mexico states like Texas, Louisiana, Georgia, Florida and Mississippi. What's used is the smaller soft shell crab.

Ah makes sense. I was googling just now also. It's not normal on the west coast but southerners love it. I've just always known that we steam crab where I'm from.

Be careful with softshell crab though... I'm not allergic to any shellfish or seafood, but for some reason, I am allergic to softshell crab and found out the hard way when I ordered it once. Thankfully my friend always carries an Epi-Pen on her for her tree nut allergy!
