I was analyzing that, too. He didn't hit his head on anything to knock himself out, but he collapsed like he was unconscious (didn't move his arms/hands to break his fall, etc.). Something seems fishy, because he pulls back on the throttle before he falls over, thus conveniently bringing the boat to a near stop as he's falling over.
Also, the girl in the middle: 1) why kind of fucking idiot stands right out in the middle like that when you're boat is going through rough waters? I grew up boating, as my dad is an avid boater, and anytime water got rough, especially to the point of the video, it was "sit down and hold onto something." Plus, if you watch the beginning of the trip, she looks like she's holding back a smile and trying not to laugh.
I think it's staged. The water obviously isn't rough, because as the driver falls over and the boat comes to a stop, it doesn't rock with waves. Notice how the boat was leaning, the guy driver was circling around and running through his own waves, thus setting up the rough water which would be required to fake the scene.
