    You're right about that.
    Preferably a very shallow pan because I can always fold it in the pan without it breaking, but 90% of the breaks happen when moving it from the pan to the plate.

                I tried making an omelette a couple days ago, ended up turning into scrambled eggs with cheese on top. Saw on a cooking show once, the best way to make it perfect is to take the pan held over your plate slide half the omlette onto the plate and push the pan over it and the other half will flop over perfectly. Sadly I forgot this when I was making mine.
