I agree with your whole statement Minus the Making is Miles "easier' then cooking.
In Baking if you miss a step or as a bit off Your Fucked. Even if you follow exactly Depending on the actual ingredients you can still have something not turn out exactly right.
Cooking you can Correct errors. Improv etc.
Working in Hotels i have not seen too many Bakers Cook well and Vice versa. Each is for different minded people
