                                                              When I lived in Germany in the 80s we were told NOT to use casual conversation pieces like "how you doing?" to the German locals on the street because they take it seriously and will proceed to tell you exactly how they are doing, good or bad..... so unless we were willing to get into a serious conversation with them, keep it simply at "hello".
