    I am marinating albacore steaks but

    i only know one way.

    kick down with the dope tasting recipes.

    i use italian dressing, soy and little orange or pineapple orange juice. awesome full flavor when its seared. very tropical.

    what do you do for tuna steaks?

    That sounds pretty good.

    I marinate my salmon steak in sake and garlic. Gives it a wicked flavor and tesxture once grilled.

    Maybe i'll try some albacore steaks that way.

        Italian dressing is the best . . . however . . . I did go to one of my g/f's the other day and she had marinated albacore steaks with some Trader Joe's stuff, off the shelf.

        It was some teriyaki deal if you want to hunt it down.

          I cooked ahi steaks tonight and used soy, fresh garlic, olive oil, lemon juice, red pepper and sea salt. I only marinated for a short time so the tuna didnt get overpowered. Threw them on the grill. Came out fantastic.

            I grilled cod tonight, "which I caught yesterday" in chopped garlic and melted butter with salt and pepper, it turned out perfect.

            Now we need recipe's for the 15lb plus giant squids we caught. first time they have been here in this area for over 10 years.

            Here is Dodger with one of them.

                      try this brother - its called ju ju sauce, its carribean style - and can be used on pork chicken and fish

                      i caught this off the food network but they didnt give the measurements. you can kinda figure out how much of what to use

                      redwine vinegar
                      mustard - dry type
                      honey
                      brown sugar
                      cayene pepper
                      red pepper flake
                      black pepper
                      clove
                      cumin
                      sauteed onions
                      coconut rum or white wine
                      passion fruit juice or a combo of citrus fruit juices

                      marinate for 20 min
