I'm currently running a blog and usually I get maybe 1-2 signups a week (mostly search engines I assume) but what other ways can I improve my blog to get more signups? I know I should be adding more content on a daily basis but is there anything else? And how well do 'successful' blogs do?

At least your blog is getting signups!
I'd suggest setting aside 1 day a week and work a full shift on posts. You should be more than able to write 7 posts in a good shift.
Then concentrate any other time you spend on it in the week getting as many free hardlinks as possible (im assuming you've installed some kind of script like Linkex) and maybe get some traffic trades with some galleries? Again, why not install a script for traffic trade?
I'd say the key to blogs is making as much of it automated as possible
