Interesting. I googled old time shoe shine, and in fact that picture shows up in the images results. Here's a quote
"Daguerre already did that in 1838. He photographed the very busy 'Boulevard du Temple' from a window high-up. Exposure time 15 minutes. Note how you don't see any people, bikes, horses or carriages in the roadway. Only a shoe-shine and his customer are visible, in the bottom left corner. They were the only ones that stood still long enough."
