Me being a texas boy i always have a smoked turkey :-)
Oven baked; wrapped in aluminum foil and on a grate held above the level of the dripping fat. Turkey is stuffed with gluten-free dressing and veggies and cooked at a lower temperature for a longer time to keep it from drying out.
Served with mashed potatos, choice of veggie, a light salad; vinegar and oil and white wine.
Smoked is good but my tummy won't handle it any more.
I am doing fried this year. I have not smoked a turkey but have done chickens in my smoker. Do you have to finish it off in the oven to get it up to temp? If not how long do you have to smoke a big bird for? 16 hours?

30 min per pound if you keep your smoker at about 230-250
but make sure you brine the turkey for 24 hours

i just smoke a turkey breast last week as a "trial" for thanksgiving... turned out amazing! I have 14 people coming over my house, so I bought a 23lb turkey and a pretty big turkey breast, the breast will go in the smoker and the bird in the oven.

I did a whole breast for about 7 hours. the temp was a little higher so it cooked a bit faster, but you can't really over cook something in a smoker, but it will definitely dry out.
a whole turkey i heard is about 8-10 hours (of course being 12-14lbs fresh).

Yeah, i figured it had to be awhile. When i do pork butts on the smoker it takes a good 12-14 hours at 200-225.
Fuck, now im in the mood to throw something on. Weather is shitty here though.
Brined and roasted is always good. This year I think I'll just do a compound herb butter rubbed under the skin and roasted. Might buy a couple of turkey's since they're only 38 cents a pound right now.
