He doesn't do all of the eating on the same day. For some of the samples (non-competition samples) he just takes a few bites.
When he is doing a challenge, he doesn't eat much the day before or the day of and he drinks a lot of water and keeps well hydrated. I was reading an interview with him somewhere about his conditioning for the challenges, but can't seem to find it right now.
