I love all fish - all depends on the preparation, IMO. There's a sea bass an Asian restaurant in the burbs cooks that has been knocking my socks off for well over 10 years. It's not cheap, but SOOOOO good.
Tuna and Salmon for sure...but my far and away favorite is striped bass. Anybody ever eat any? There is nothing like grabbing some off the coast of Montauk or even in the fresh water lakes they were stocked like Lake Lanier in Georgia...a little mango chutney or cilantro, olive oil and garlic.
Salmon and Tuna. When it comes to Tuna, I like "Toro" which is cut from the fatty belly area of the fish and harvested during the colder seasons. Fat = more oils and hence a more pronounced flavor.
because it and wahoo and a few others have "gamefish status" meaning that it cant be sold commercially and the only legal way a restaraunt can sell it is if the owner or his employees catch it on rod and reel
Its the best raw as well add pompano to the list for great raw fish
