You can do a wide variety of things depending on the crime and information about her is key, the more info the more shit you can do.

If you want to do something simple just tell her you need closure, would like to remain friends and could you see her one last time over dinner. If she agrees take her to the most expensive restaurant in town and once you've ran up the bill with a great dinner and 3 or 4 drinks tell her you are going to the bathroom and leave her ass there stuck with the bill. Call her cell about 15 minutes later and tell her thanks for dinner, laugh and hang up.

Or if you want to get real mean start an all out assault and just keep doing shit over time. Order shit to her house, super glue her locks, paint her windows black in the middle of the night, spoof caller ID with her number and call her family, boss and co-workers in the middle of the night and play porn sounds. Its endless what you can do, just spread it out over time so she will go fucking nuts.

Completely spoil the new girlfriend, trips to the islands, shopping sprees in Paris, Diner in Venice or Rome. Have your ex help you pick out jewelry for your new girlfriend.

Right when she is wallowing in the misery of her own life, pay a super hot escort to seduce her current boyfriend/husband. See if you can have the ex catch her boyfriend in the act. Make sure the escort is hot enough that she can convince the guy to leave the ex.
