Acts the best (pretty much in order): Edward Norton, Kevin Spacey (would be higher than Norton but IMO hasn't expanded his horizons as much as Norton has, at least that I've seen), Morgan Freeman, Samuel L. Jackson, Christopher Walken, Denzel Washington, Jim Carrey (say what you will about him but he's fucking hilarious and has done dramatic roles very well too), Robert Downey Jr., Meryl Streep (I feel bad only having 1 actress on here but unfortunately most of the popular actresses suck IMO and are chosen for eye candy - she's the only one that comes to mind that's pretty good)

Picks the best movies to act in (aka I like most of the movies they're in, not necessarily because of their acting): Bruce Willis, Brad Pitt (and both are in Twelve Monkeys, one of my all-time faves), Harrison Ford, Jeremy Piven (he's never really in the BEST movies, but just in a ton of really good movies and does a pretty good job in them)

Sorry, can't just list 1 when it comes to actors. :P
