Florida in August?
Book something indoors, with a serious A/C unit.
Orlando is too far inland to catch a nice ocean/gulf breeze, and it has a lot of mosquitos, too. So unless you want to be slapping your alcohol scented skin, I'd skip the boat idea.
I HATE Fla in summer. The heat and humidity are just too much for me. It's like 105 F with 100% humidity. Brutal as shit.

The boat ride thing has one problem, you cannot get off the boat easily. Its not such a bad thing if you have an audience that is completely satisfied with the activities, but it can be a long ride indeed if the weather is crappy or the events on board dull. You could have the boat make planned stops, but then that necessitates going in a circle. My suggestion is to NOT do the boat and host a party at either a club, restaurant or strip joint.
