I think I've only ever seen one website with free content that is pr 6. I've seen plenty of PR 5 but that seems to be pretty much the highest anyone can get these days. Am I wrong?

i have seen lots of pr6 and pr5. myself i have only gotten pr5 at the most.Since 1999: 69 Adult Industry awards for Best Hosting Company and professional excellence.

There must be several penalties applied to adult sites, for example:
(I'm just making these up, have no proof of any of them)- Adult word(s) in the domain name
- Adult text in the title tag
- Adult keywords in the other meta tags
- Adult text on the pages of the site
- Links from sites with aforementioned qualities
- Links to sites with aforementioned qualities
I'm assuming each of those points brings some small penalty to your site. Perhaps also if two of those points are found, it's an extra penalty, if three are found, it's an even higher penalty, etc. That way, sites with just a little bit of 'adult' content won't get penalized as much, and sites with nothing but adult will get penalized the most.
So, how can we get around these penalties (which don't just affect pagerank, but your site's rank in the SERPs)?Comment

the reason adult sites don't get high PR its because of the linking
structures used.
Everyone links through scripts (tgp/mgps) or through affiliate links which
give less value that a straight hardlink to the site.Comment

I don't agree that it's the only reason, but it may be a contributing factor. Even with the penalties, it's not impossible for a site to be PR 6. I just wonder if it would be something like PR 8 if the penalties did not apply.it has nothing to do with that.
