That is a tradegy. If there was not leftovers then you better fry more turkey. Thanksgiving is not Thanksgiving unless you have plenty for sandwiches with the works the next day or two.Comment

I'd hit itSage butter under the skin - Apple, Herb & Toasted almond dressing inside - Bacon slices draped over the bird
It's actually an unbelievable turkey.
Apple, Herb & Toasted Almond Dressing
-------------------------------------
1 loaf multigrain bread (cut into 1 inch cubes)
4 tablespoons unsalted butter (1/2 stick)
2 cups medium-diced yellow onion (2 large)
2 cups medium-diced celery (3 large stalks)
2 Granny Smith apples, unpeeled, cored and large diced
2 tablespoons chopped flat-leaf parsley
1 1/2 teaspoons minced fresh rosemary leaves
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 cup chicken stock
1/2 cup sliced toasted almonds
Saute all the veggies & apples in the butter until they are soft, season with salt & pepper. Add bread cubes, almonds & chicken stock. Cover and let sit for about 20-30 minutes. Stuff your bird and go. This dressing is off the motha fuckin chain btw. It sounds like a kind of strange mix of taste, but it is fabulous.Comment

Fry and Bake. I am going to try Gabes trick this year of putting the bird in a bit early. I tend to get the skin a bit to crispy prior to the bird finishing.Living in Virtual Reality

It's not so much taste as it is moisture, one of the problems with baking/roasting turkeys is that it can easily dry out. Brining ensures that the bird will stay moist. Frying is another way to keep your turkey moist, the skins sears quickly in the oil locking in all the juices.
I live in the south and I cant remember not having a fried turkey for Thanksgiving Day, its a staple in our house like pumpkin pie would be to most.
Brined turkey or fried cant wrong either wayComment
