The fact that it's done from a photo makes it no different than painting a live scene. Also, keep in mind that these are LARGE paintings, as evidenced from one of the photos of her at work. So not only does she need to be photo-realistic, she needs to do it at a much larger-than-life scale, which adds to the difficulty.
As well, photo-realism is no less an interpretation than cubism -- it's a choice to use a certain set of rules and framework within which to interpret the scene. You make it sound like she's just copying something, not trying to start a flamewar but frankly, that sounds like you've never painted before.
