I have not had meatloaf in about 10 years. The Brits just don't do it. Meatloaf sandwiches used to rock.

Hell with them I say, fire up a damn meatloaf every now and again. I use the extra lean ground beef and put some wheat germ in along with whole grain bread crumbs, lots of chopped onion, some good healthy spices and a little of the blazing hot stuff to top off the flavor.... heaven I tell you. And NOT unhealthy.
And Munki, what's this about MINI meatloaf sandwiches? Mini? I don't think so. I cut mine two inch thick and make big honkin manwiches out of it. Quit wimping out!

Beth tried out a new recipe that was mini- serving sized meatloafs instead of the giant she normally makes. I was skeptical at first, but as the leftover sangmiches proved... having that crusty outer coating baked into each slice made it quite delectable...

Yeah..I just keep forgetting that it exists after going to long without it. I need that layer of baked in ketchup on mine ...seriously, I may have to make one soon.

My mum came over from England, and my mother-in-law cooked meatloaf (with spuds and carrots in the pot with it cooking in the juices), and lots of gravy -- and she loved it. She had never had it before.
Kept it simple with a supreme last night... I still want more meatloaf... that shit's like crack.
mix up more meatloaf, pull out some foil, place potatoes and carrots on foil, place meatloaf on top of them. wrap the foil in a pouch and let it sit on a med/low grill for 45mins to an hour. it's quite easy. then you can treat her AND get more meatloaf with that great grill flavor. yum yum
