You should get African Cichlids...they need brackish water (mix of salt and fresh water) way easier than salt water...and the fish are very colorful. They are just a little territoral. If you were to go with a standard size tank...55 gallon looks great. My dad was one of the 1st in NY to breed these fish when they 1st came out in the 70's. He sold hundreds of them to pet shops...
If you have money to spend I would get a custom tank, acrylic sphere/circle type tank...glass tanks are dangerous. Someone I now had a 250 gallon salt water tank...and the glass gave way...water leaked through 2 other apartments.
Also goldfish (not the small orange ones) are easy, and here in Chinatown they have tanks of these big bright orange/red and white ones...they look insane. Not as big as Koi.
