When they "include gratuity" they physically include it in the bill. In this case, the grand total of what I allowed them to charge my debit card was $50 - I physically wrote that in there. I didn't write in "$50 plus what ever the fuck you decide to charge me".
I bet you it happens a lot more than we know about too.
