If I'm going to go with a regular store bought cheese, I like sharp cheddar or a creamy havarti.....Other than that I like.

Triple Cream Cheeses like St. Andre or Délice de Bourgogne eaten off the knife or a baguette
Bleu Cheese eaten in chunks off the knife like Roaring 40's
CAVE AGED French Gruyere with the crunchy crystals...I don't like the milder Swiss Version
