Your eating egg whites every day would not effect your cholesterol at all since they contain none. Now the muffin, ham, and cheese are another matter but anyone who eats even reasonably well and judging by working out and egg whites you do. You would have nothing to worry about cholesterol wise. If your still concerned find a whole grain muffin if you can or add in some more fiber some other way.

I feel you on fresh eggs over store bought. Though store bought is real too

just they are a bit older. By the way with large eggs the higher the chances of double yolks go up. Then of course the color of the yolk changes a bunch dependant on what the little birds are eating. Ours ate plenty of corn, scratch, and insect. Had deep yellow almost orange yolks. However one of the other people who raised chickens as well who allowed them mostly industrial style feed and was more obsessed with the blueish eggs she would get. Her chickens yolks were always very pale. Also her eggs were smaller but she had smaller chickens too.
I finally had to get rid of my chickens. Damn zoning issues and a piece of shit person on the street who had nothing better to do than bitch and moan until they finally gave me notice. Not like they were annoying anyone really at all. Sure some occasional noise but nothing in comparison to his three big ass dogs that bark non stop, yet somehow that is ok.
Oh side note, if you butcher home chickens their skin is also very yellow unlike the white you see in stores. I think it tastes better myself and so did a few other people, just one person told me they noticed no real difference. Oh and one other person who could not eat it at all knowing that I had killed it.

Hard boiled egg, glass of hot tea with cream and honey, a grain or some bread, and any fruit that is in season or when there is non whatever I still have left that I canned.
