The best meal ever...
Starters:
Spanikopita: Phillo pastry wrapped around feta cheese, fried onions, spinach, parmesan, and dill.
Fried Halloumi: Click halloumi cheese relatively thick, pan-fry in strong olive oil.
Main meal:
Mediterranean Chicken: Marinate large chunks of chicken in olive oil and a little lime juice, with salt, pepper, lots of marjoram, chives, oregano, nutmeg, minced garlic, coriander. Fry in a very hot pan with some chopped red onions.
Sauce:
Pseudo-tsatziki: Greek yogurt, chopped cucumber, dill, garlic, olive oil, a drop of lime juice, salt.
There are two ways to enjoy this. You can have it with flavoured rice (bioled in chicken stock, add salt, butter, garlic, pepper). Alternately, put the chicken, onions, and tsatziki inside warm pita bread.
This is great with fresh mango juice, or your favourite cold drink.
