The easiest way would be to see some of the festivals such as

Isle of Wight 1970 - totally comparable with Woodstock just less mud

California Jammin 1974 - only thing I have seen is Purple and a couple of Black Sabbath songs

and probably all the Lolapalooza's - they always had a great lineup of bands in there

Apart from that:

The Stooges - at the start of the 70's

The Velvet Undergorouind - in the Factory

Deep Purple - Live in Japan 1972

Johnny Winter around 1976 - prefferably Texas

ZZ Top around 1979 / 1980 - prefferably Texas

Judas Priest - new wave of Heavy metal - around 1980 / around the Unleashed in the East times

Iron Maiden - World Tour 1985

Guns n Roses - around the "Paradise City" video shooting time

Jane's Addiction - around the Nothing's Shocking album or at the start of the 90's

Outside of Rock:

The pioneers of fusion Weather Report, The Yellowjackets, Mahavishnu Orchestra and John Coltrane and Miles in their cool jazz era, speaking about cool - Chet Baker, The Bird yet come to my mind..

Too many bands I would want to see, I would actually want to live through the late 60's and through the 70's era, the only problem is that I would probably have a hard time to cope with the 80's after that.
