Well, a sandbox game is still a game... it's just a different kind of game. Playing with star wars characters was a "game" as a kid.
MMO's are kinda like sandbox games, too - since you can never really "beat" them. But they're still considered "games"
Pretty much all of the Sim games are this kinda game... Sim Coaster (mid 90's, I think) was cool in that you could build and ride your own roller-coasters. Sim City was fun back in the day. This last Summer, I hit up Sim City 2000 for craps and giggles, and had fun for a week or so, but soon found myself bored.
I've never gotten into "The Sims" for pretty much the same reasons you're describing not being into it... I knew ahead of time there wouldn't be much point in it.... no place where I could say I was "done" with it except by my own boredom.
I'm too old for action figures, I think. :-)
