The common/very poor foods of any ethnic region almost always taste the best no matter how they look. Often I would rather take some came from the poor style dish over a fine french dish or something. *unless again it is a poor person french dish
Typically the poor get crappy meats and cuts. These are often full of fat, tendons, bone matter, you name it. All of that translates into collagen which is that lip smacking flavor. Not to mention it is also slow cooked and almost everything is better slow cooked.
