I switched to a Mac over 4 years ago and I've never been happier. I personally haven't found the need to use a program that ONLY ran on Windows and there wasn't a Mac version. That being said I believe you can do anything you want on either machine. Take care of either one and it will last you a long time.
As for the hard drive issue on a Mac while running Windows... Yes the files are not usable for each and that's simply because the hard drive is partitioned. So you essentially have a Mac AND a PC on the same computer. As was said in an earlier post, an external hard drive might take care of that issue for files.
If you like Windows and feel comfortable with it then stay with it. I don't think Mac's are inherently "better" with graphics than windows... at least not anymore. I do love the imaging software for Macs but I'm not a rabid Mac person that I have to get everyone else to switch over. It would be great for my stocks but the iPod and iPhone are doing a great job so far... lol
