Actually, the method is to drink one glass of wine quite fast, so it "gets you", not sip it. Then go brush your teeth or whatnot and five minutes later lie down in bed. You'll be out like a light in a few minutes.
If you start sipping it like normal and keep drinking, you'll start enjoying it too much and for a while your body/mind may become too active, so you won't feel tired until you're REALLY drunk.
