Having lived in the middle east I will tell you what makes chicken shawarma the best. In the middle east, we dont use pita bread, its too thick. We use something very thing, similiar to a tortilla or lavash bread.
So what makes the shawarma so damn tasty there which I havent been to replicate here yet...the bread, the garlic mayo sauce, and the damn little pickle they put in it.
I dont want anything else in my shawarma but that and the chicken, maybe a tomato every once in a while. I found a decent place here in Santa Monica but its more of a plate than a wrap. Great garlic sauce though.
