She should be pretty, yes, but I think the photographer, quality of the photos/video and the setup is more important. Many girls (average looking) can sell if you know what you are doing. And most important is that they know how to flirt with the camera.
Not only interaction with the surfers, but also affiliates is important. It's nothing more horrible than webmasters posting pics themself all over the place and at the same time never update their affiliate area...thats waste of ressources.

For the market-when-they-are-new-then-forget solo sites, hot surely works better, if only because more webmasters are likely to get on board to promote them. But for the real solo sites, I would expect the site as a whole to matter more than the looks of the girl/woman. I can think of several long-running and AFAIK successful sites which are not run by stereotypical "hot" girls.
I have a feeling that the cookie-cutter solo sites are fast reaching their sell-by dates. As someone else wrote, a cute/hot girl is pretty much a guarantee these days of tame content, likely not too much of it, and very little in the way of personality.Comment
