Write text.
Control T (transform tool) it to the basic shape you need.

Having an endless supply of the heads with transparent backgrounds (using the lasso tool) helps too. I've got about three different files that I use. I do all of this in FireworksMX, not Photoshop, I find I can work much faster in that. This main file is saved appropriately as "TheyGaveMeHead.png".
