I have a Garmin GPS with a bult in Color LCD PLotter & Bottom Sonar. They can be a PITA to run especially when you're driving the boat and bobbing up and down constantly.
People do it but I wouldn't go out 60 miles in a bay style boat. That's definately Deep V and high free board territory.
I've got a Sailfish 218 and it's pushing it sometimes if the seas get over 4'. It's a helluva deep v though so its a smooth fast ride when the seas are a nice 2' chop. I can cruise at 50 MPH and get almost 4 MPG with my 225 Yamaha 4stroke.
One day if I ever start making alot more money than I am now (alot more), I'd like a 50 - 60' Carolina Flair Hull Custom fishing boat. They are 2-3 million though fully rigged, but you have all the comforts of home and that Carolina Flair hull is Bad Ass. If you get too hot just go inside and take a breather and get a blowjob or something.
Seas are much rougher off the Carolinas so the best rough water boats naturally are built there. Most are all custom built to order.
Something like this would suit me:
