Maybe I am wrong, but it seems like in this day and age of big college ball there should be some incentives other than a scholarship and the possibility of turning pro.

you are 100% wrong. 
90% of the people who play college ball know they have no shot of making it to the pros. They play cause they love to play.  The school uses a lot of the money on acedemics, new buildings, etc.. It's not like 1 individual is profiting off of it.  The school is better because of it which all the students benefit from.  If the player is that good his payday will come soon enough. 
The last thing that college needs is to have paid players. I like college so much better then NFL, NFL it all about the money, College there is no egos, etc. It's because they love to play. period. 
BTW Reggie Bush got like a 50million dollar contract plus millions of endorsements, I don't think he minded playing for free for a few years in college.
