Made from Kobe beef I take it? It's sad that people still buy Kobe beef. The reason it is so tender is because basically from birth to slaughter the calves are suspended from straps so they can't move around because using the muscles makes the meat tougher. We used to live near a bar called Matt's in Mpls. that was voted the best burger in the Twin Cities. It was called "The Juicy Lucy" and had two patties w/ cheese in the middle, grilled onions on top, and was served WAY too hot to bite into.
