Could take some time... it doesn't change that radically.

Give it at least a day and make sure you changed all the appropriate tags etc. to car keywords.

Not only text of the page, it takes stuff like the page title etc. also into account and as pradaboy said it will take some time to show new ads

Adsense sometimes takes a while to make the ads match. But sometimes it doesn't match the ads at all. What helps is to do common SEO stuff like having bold and italic or headlines containing the keyword you are targenting.

There's a cache and it also depends on their inventory. I have a blog on economic issues but I put some test history text in there for about 2 days while fixing up the rest of the blog. For about a week, there were still adsense ads showing ads for "Roman vacations" etc etc

They have a cache and also inventory issues.
