Narrow power bands.
F1 cars usually have 6 or 7 speeds and they need that many because their torque doesn't really kick in until not far short of the 19,000 or so rpm the engines max out at. So if the engine isn't kept spinning fast, they wouldn't be capable of the acceleration they need.
