there are different sandwich generation scenarios:

Traditional: those sandwiched between aging parents who need care and/or help and their own children.

Club Sandwich: those in their 50s or 60s sandwiched between aging parents, adult children and grandchildren, or those in their 30s and 40s, with young children, aging parents and grandparents.

Open Faced: anyone else involved in elder care. [1]

I raised my kids as a single father, and I spent the last three years taking care of my mother. She died in June. No will, no last wishes.

No will. No last requests. You would not believe the nghtmare of debt and lawyers she saddled me with.

my girlfriends mother just had her second stroke and now can't drive and we're not sure if she can even take care of herself anymore. my girlfriend is only 30, we don't have any kids yet but damn this seems like way too early to be worrying about this kind of stuff.

Long Term Care Facility will have all of the medical devices if/when she needs them. You probably do not have those in your home... so there is no decision to make , therefore, nothing to worry about.

Visit regularly.

true. thats not what my girlfriend wants to happen though. she doesn't expect to have her live with us, as the house is not set up for someone who has trouble getting around but she feels her mom is not old enough to end up in one of those places and hopes she can still take care of herself at least to the extent that she can have her own place. hard to say if she actually will be able to though.
