They will send you a MTCN or money tracking control number. You will then go to any western union office with that number and some ID and you can pick it up.
Becarefull of exchange rates, they suck ass that way.
Also if you expect large amounts like over 2k find an office that will pay out that much. Most around here will not payout more than 2k, aside from one location. Some are as low as 500.00
